For years, Adobo Down Under has been a digital space for documenting the soul of our culinary heritage. Now, that journey is becoming something you can hold in your hands.
For a long time, the story of our kitchen has been told through the eyes of others.
I wrote Adobo Etc because I was tired of seeing our heritage treated as a novelty. I wanted a book that didn't just list ingredients, but honoured the sophisticated logic of our flavours and the tantiya of our elders, the intuitive wisdom that no standard recipe card can capture.
This cookbook is a guide to the rituals that turn a simple meal into a legacy. It is a document of how we cook now, here in Australia, without losing the soul of where we began, where we came from. It treats our home cooking with the reverence it has always deserved.
